Anything really. So far I've done chocolate, vanilla, orange, cherry and coffee. But I admit that I'm really itching to try out my rose extract. And I've got tons of recipes for all kinds of fancy exotic stuff.
One of the things I like about Macarons is that they're just naturally gluten free, no substitutions or adjustments necessary.
